We bring the table cloth, butcher paper, plates, napkins and forks. We bring the right-sized professional-grade pot (and an outdoor cooker if you need it) so you can boil like a pro.

For T.H. Merrick, the Outer Banks isn’t just home — it’s where his love for seafood and hospitality began. Growing up on the Carolina coast, he learned the importance of fresh ingredients and simple, flavorful cooking that brings people together.
After three summers cooking with Firehouse Boil OBX, T.H. became known for his coastal flair, signature seasoning, and easygoing connection with guests. When he and Dave decided to bring the experience inland, T.H. was the natural choice to lead the Raleigh operation.
Now based in Raleigh, T.H. delivers the taste and spirit of the Outer Banks to gatherings across the area. With nearly 15 years of culinary experience, he brings passion, precision, and a touch of coastal magic to every Firehouse Boil — creating not just a meal, but a memorable experience built on community and great food.

If your group has vegans, vegetarians, or those with other dietary restrictions that require a fully animal-free boil, we have this flavorful option. We package and prepare this boil separate from the rest of your seafood feast. With this meal you get vegan sausage, kelp, white mushrooms, corn, potatoes, sweet peppers, green beans, onions, and a whole lot of tasty seasoning.
